Why I Love Fresh Vegetables
My mom grew up on a farm in North Texas. When other moms chose canned vegetables, my mom insisted on fresh produce. That’s what I was raised on.
I remember as a kid having dinner at a friend’s house. Her mom served canned asparagus, which I had never seen. The thing I remember the most is the smell – which was not pleasant. And the asparagus was limp and kind of mushy.
Thank goodness I knew from my mom what fresh asparagus was supposed to taste like.
I learned how to prepare fresh vegetables to their best watching my mom. The idea of canned vegetables really turned off my young palette.
Later, as canned vegetables, such as asparagus and green beans, became less popular, I celebrated my mom’s cooking.
Today, I will buy peas and corn, but only frozen, not in a can. There is just no comparison in freshness, taste and texture.
Today, I celebrate any recipe with seasonal vegetables.
