Yummy Summer Watermelon Cocktail

Summer Delights

When I think of summer fruit, I think of 2 types ~ peaches and watermelon. (If you missed it, check out my Peach Galette.) Unlike other fruits, these 2 are totally for summer eatin’ and drinkin’.

If you are from the South, you probably remember looking forward to eating watermelon in summer; a thick slice of sweet goodness eaten outside (My mom would not let us it inside and get sticky juice all over her just mopped floors.). I remember we all bent over, trying to keep the watermelon juice from running down our chins.  And, of course, neighborhood boys would spit the seeds (black in those days) as far as they could. Usually, at each other or us girls. My mom would bring a salt shaker outside to sprinkle on the watermelon to make it sweeter. Afterward, we would turn the hose on to wash ourselves off, getting soaked in the process, but having a blast.

Those were the good ole days.

Do kids still do that today?

Today most watermelons are seedless or the seeds are white and so tiny and soft you can practically swallow them. In addition to the oblong variety I grew up with, watermelons today may be round and come in different sizes.

I no longer eat my watermelon bent over in the backyard. I’m a grown~up now and I can have my watermelon in a grown~up way. So there! So I was thrilled when Sweet Shark’s sister sent him this recipe for a watermelon cocktail.

Yummy Summer Watermelon Cocktail

First, get a big slice of watermelon from the Farmers Market or your local grocery store. See those little itty bitty white seeds?

Chop the watermelon into bite size pieces.

Next, put the watermelon and 1 tablespoon of simple syrup or 3/4 tablespoon of agave nectar in a blender.

NOTE: Agave nectar is a natural product

Yummy Summer Watermelon Cocktail

Process until very smooth.

Pour the watermelon pulp into a preferred glass, such asa wine glass or a double rocks glass, filling 1/4 ~ 1/2 of the glass. Add ice cubes.

Fill the glass with a non~oaky chardonnay. Top off with a splash of soda and garnish with a sprig of mint.

Isn’t this the prettiest thing? I can tell you that it is very light and refreshing and not as sweet as you might think. Speaking of sweet: I’m not a fan of soda, so Sweet Shark made me one with a splash of 7~UP.  I liked it better, but that’s just me.

The Recipe

It was so nice to sit out by the pool on a hot evening sipping this cocktail as memories of backyard watermelon eating came back.

I’m happy to report that Sweet Shark did not spit seeds at me.
